Zucchini Fritters

Perfect for using those giant zucchini from your garden or the market...

Makes about 24 fritters

INGREDIENTS:
3 zucchini, cleaned and grated
2 teaspoons Kosher salt
2 eggs, beaten
3/4 cup breadcrumbs
1 clove garlic, minced
Olive oil, for sautéing


PREPARATION:

1. Shred the zucchini with a large grater into a colander, sprinkle with salt and place in the sink or over another bowl to drain.

2. In a medium bowl, combine the egg and garlic.

3. Squeeze the excess water from the zucchini and add to the egg mixture, toss until combined, fold in the breadcrumbs, do not over mix, add salt if needed and form into small patties.

4. Put olive oil in a large sauté pan, over medium-high heat, once hot add the patties and cook until both sides are browned and crispy.

Truffled Beef Tender Sandwich

A fabulous sexy sandwich for grown-ups!  Serve with a slow roasted tomato salad.

1 ½  to 2 pound beef tender, trimmed and tied

Butter

Salt and Pepper


PREPARATION:

Pre-heat oven to 500º

Smear beef tender with lots of butter and coat with salt and pepper, place on sheet pan.  Put it in the oven for 22 (rare)-25(medium rare) minutes in oven.  Test with thermometer poked in the end of the piece of meat 120º for rare, 125ª for medium rare

Allow to cool and slice thinly, serve on a baguette smeared with truffle butter, arugula lettuce, shaved Grana Padano cheese.

Accompany with a Roasted Tomato Caprese Salad.

Slow roast 10 plum tomatoes- slice them in half lengthwise, remove seeds. Sprinkle with olive oil and balsamic vinegar, 2 minced cloves of garlic, 2 teaspoons of sugar, salt and pepper and roast in the oven set at 275º for 2 hours.

Plate up with sliced good mozzarella cheese and chiffonade basil, sprinkle with salt and pepper and drizzle of olive oil.  Simple and delicious.
